I almost gave up on chess since I am not able to make a good blitz rating here, despite tens of games and the GothamChess stuff I watch. What's the best way to deal with it?

To improve in blitz, first improve your chess in general by studying and playing in long time control games. Then re-acclimate to the speed of blitz chess by playing at least a few games in that time control per day.

what do you do in bullet to accumulate such high rating? You can't flag opponents that are 2000s(usually), so you can take tactics from bullet into blitz. Also, you cant just watch youtube, you have to practice your skills.

What happened here is you opened with a good start on Bullet and then maintained your rating.
But you got unlucky in your opening Blitz games. Your rating will keep increasing over hundreds / thousands of games.
Not 'tens'. haha this is funny.
This is a demonstration how extreme the Glicko rating system is in the provisional stage.
It's a a good rating system, but the opening win / loss being +/- 600 points makes people write posts like this.

Bullet should not be counted as a real form of chess. It is actually very easy to play, so, I feel pretty bad when I think that I will never be able to earn something like this in blitz.
